Poker Detecting how someone plays a particular hand to narrow their range?

    Whenever I read about putting someone on a range and narrowing that range as the hand plays out, one thing which always comes up is to spectate how they play a particular hand, such as top pair, middle pair, how they play their draws etc;

    The one thing I don't understand though, is how do you do this? I have been playing around notetracker and set up custom notes. As i'm fairly new to the whole note taking thing I setup a custom note to tell me when an opponent bets the flop with middle pair, but then checks when a scare card comes on the turn etc; which is fine. But I notice that this is a fairly common thing, and people may well do this when playing top pair too, so how do you differentiate between whether someone is playing top pair or middle pair etc;?

    I usually start by going by that persons personality most people play like there personality, it usually takes time, focus and watching how they play each hand to figure our especially live. Just go by what pattern they start to exhibit especially if they play you or a particular opponent a certain way. Some may over raise big pocket pairs all the time, some will re raise on any flush draw. Its just being patient and watching a pattern appear, just watch and hope you see alot of showdowns to find there actual range.
